Ingredients
1 and 1/2 to 2 cups cooked Rice (brown Basmati
rice was used in this recipe)
2 tbsp. Oil
3 cloves Garlic, minced
1 inch piece Ginger, minced
1/2 Onion, chopped
2 tbsp. to 1/2 cup Kimchi,chopped
1/2 cup various chopped, steamed Vegetables
(Carrots, Peas, Broccoli stems, Bell pepper)
2 tsp. Sesame oil
Salt & Pepper to taste
2 tsp. toasted Sesame seeds
2 Green onions
Fresh Sprouts

Procedure
Heat 1 tbsp. oil in a wok-type pan over medium-high heat and add garlic, ginger and onion. Saute until golden brown, adding chopped vegetables. Then add one more tablespoon of oil and add rice. Mix well, breaking up clumps, and stir in kimchi. Season with salt and pepper and add sesame oil. Continue frying until well combined and some parts get lightly browned.
Spoon into 2 bowls and, if you like, top with sprouts, vegetables cut up into matchsticks. Garnish bowls of fried rice with toasted sesame seeds and green onion and enjoy!
