Lentil Salad << Back to Sattwic Foods

Ingredients

2 cups cooked Brown lentils
1 ripe Tomato, diced small
1 clove Garlic, minced
1/2 cup Parsley, minced
1/4 Red onion, finely sliced
Juice of 1/2 Lemon
2 tbsp. extra virgin Olive oil
1/4 tsp. Cumin powder
Sea salt and Pepper to taste

Procedure

First place the sliced onions in a colander and sprinkle generously with salt. Let it sit for 10 minutes. In a large bowl, place the cooked lentils, tomato, garlic and parsley. Stir together and stir in lemon juice and olive oil. Season the salad with salt, pepper and cumin powder. Squeeze the onions with your hand to remove the pungent juices. Then rinse them well with hot water. Stir the onions into the lentil salad.
Serve as a side dish, or with rice or other salads.
