Walnut-Avocado-Mango Salad << Back to Sattwic Foods

Ingredients

1 Avocado, diced into 1/2 inch cubes
2 Walnuts, soaked in warm water for 30 minutes,
then roughly chopped
1/2 cup diced Mango
1 tsp. chopped fresh Basil
1/2 tsp. minced fresh Ginger root
1 tsp. crushed Pineapple in a little juice
1/2 tsp. Lemon juice
Fresh ground Black pepper to taste
1 tsp. Walnut oil
Rock salt to taste

Procedure

Combine the mango, walnuts and avocado in a bowl. In another bowl, whisk together the walnut oil, crushed pineapple with juice, lemon juice, basil, ginger, salt and pepper. Pour the dressing over the salad and blend gently.

Serves 2

Note: Use freshly crushed pineapple rather than canned pineapple in order to make it a Sattwic food.
